I'm running it as a modem on a raspberry, connected via a powered hub. so there's still power available and the n900 is still "connected" and working as a modem.
The phone was set to PC-Suite mode...

What you mean is D(ynamic)-RAM since flash is also a type of Random Access Memory. The N900 has only RAM type memory.
I also suspect that the root partition might be a different flash technology...

Never ever. Such a helicopter can't be remote controlled. But there's a model "helicopter" (actually a quadrocopter) with an onboard camera which can be controlled by an iphone app through wifi.
