Tick the box in its setting that says "non-provisionable device" is probably that option you are after.

What about providing a hold down (I don't know the correct term for when you hold your finger on an item and additional options come up) option along the lines of "use this services address to email...

Not sure if this is the right place for this or if it has already been mentioned but if you have a contact that has a instant messenger/service entry you do not get the option to then email them...
