I had your same problem and I solved this way:

1) run scratchbox
2) run sb-menu
3) hit "setup a target"
4) hit "FREMANTLE_ARMEL" (if this is the system you want to cross-compile for)

Here's a quicky hacked together version of what you want. Compiled against Diablo's SDK. Source + Git repository included.

Either compile it yourself in the SDK or trust my binary and copy...

You can detect headphone plug/unplug events via D-Bus, so you could write a service that then notifies the media players.

BTW: On the N900, you can non-headphone and headphone volume...
