You're best bet would be to file an enhancement request in maemo bugzilla asking for the missing Australian cities to be added in a future release. https://bugs.maemo.org

eg: No Toronto...........

The only point of choosing a city is as an alternative way to get the correct time zone. On my desktop computer I simply use 'MET' (Mean European Time), no city necessary. I can't select that on my N800 so instead just select whatever city with the same time zone as the one you want. It doesn't matter if that's the city where you live or not. As for Toronto, I'm sure there's another Canadian city included in the same time zone. Just use that one. It's only for the time zone, after all.
