I've installed the following:
cli:
xterm - because I need command line and root access
bash - because I like bash.
vim - (soon to be installed anyway) need a text editor to get somethings to work with the way I installed them. (dpkg when ever possible).

networking - because I'm a network analyst and bought this to be used as a tool
open-ssh - because what good is linux with out it?
bind (dig, whois) sometimes I need more information than just a domain or ip address.
iputils - to ping and trace of course.
wireless tools - required for a tool below.
dsniff - haven't used it yet, but I wanted a sniffer (which goes with the next tool)
kismetWIP - used for war walking at work to track down rogue wireless acess points. The sniffer goes with this incase I can't track it down, to pull the data going over the wireless link to get the person's work id.
nmap - used to check for open ports on the network. goes back to network analyss.

gui:
load monitor - seemed cool.
dejaPIM - it's replacing my palm as my orginizer.
maemo-xchat - its good to talk to friends.
mameo-gaim - see above (both are done outside of work).

That was the 2005 client. Where ping was acutally available without useless other crap.

In 2006 you have to get "busybox with ipv6,iproute,netcat,ping,ping6,telnet,traceroute and wget" and when you try to install it, the system screams about needing an ip6 kernel. It's a pain really. I don't want IP6, don't needed it, and don't plan on using it anytime soon. Go to the application catalog on www.maemo.org

well i did find that enhanced busybox and was able to install it w/ no problem. no error messages, and ping works now. can't believe someone would release a network device w/ no built in ping.

The main thing I installed was a VPN tool to let me inside a corporate intranet. That thing was a lifesaver.

If Application Manager didn't give me such fits, I'd be 100% happy with the 770. It does what it's designed to do.

Since you asked :) and its an N800...

Media Streamer -
VNC - First non-Nokia app downloaded. It works.
Nako - First Nokia app downloaded.
MaemoPad - Rather than learn VI. Didn't help with the omni.ini file. Learning VI.
GAIM - What I needed to begin with.

If you only occasionally need to edit text and configuration files, mc (Midnight Commander) might be a good option. It's basically a file manager with a.o. an embedded simple and easy editor.

Don't forget that you need to install Xterm first and that mc doesn't show up on the sidebar of installed applications: it's started by typing "mc" in Xterm.
