Before installing you can have the option to click in "Details"...

It will have the list of packages that will be updated.

That is not a ChangeLog. A ChangeLog says what the changes are, for example "changed application menu to show icons".

konttori_nokia: kernel contains one fix, which is allowing HAM to trigger ubifs to higher compression level for the SSU update.
konttori_nokia: browser contains one fix, which is browser UA string to say that it's pr1.0.1 device.
konttori_nokia: GTK contains one fix, which is dropping the icon cache support.
konttori_nokia: application manager contains 37 fixes, mostly related to SSU stability
konttori_nokia: And a bit related to the new look of the app grid.

That one's a bit worrying if it means PR1.1 does not fit into the / partition without help.

I think it's more for being able to install PR 1.1 on systems where users have installed unoptified stuff. Anyway, a "larger" rootfs is always good. Better compression yields more space.

the most of the software is kept away from rootfs partition.

usually on linux systems applications are installed in /usr/bin or /usr/local/bin and other places in the root partition. since the root partition on the n900 is pretty small, they decided to install the apps in /opt/ which is on a different partition. the app package have to take this into consideration and install themselves in /opt/, and are thus called optified. it's just a made up term i guess but it caught :)
