how many operation system exist for nokia N900 and who is the best for install

Maemo, the operating system that comes with the N900, is the best. There is Maemo, Nitdroid, and Debian, basically, though there are more varients of each. There is also MeeGo, but it is not really ready for installation yet.

sure you can, there are many post and videos about this.
you will need a sd card
enough space
just follow all the steps and you will have all of them.
