For pinyin, you'd probably want to try mscim-googlepinyin. Do not use mscim-pinyin, because it'd cause serious problem (baidu for 'mscim-pinyin snnn' and you'd see why).

You can also try Penpower input method (mscim-n900-ppinputmethod), which included pinyin as well as handwriting input method. Depends on where you buy your N900, it may be included in your default installation.

I don't recommend you run Android(NitDroid) on N900 now, Maemo is good as it is.

There are many GPS apps out there. Tell me your needs in more detail so I could recommend one best for you.

Don't hesitate to ask if you've any question. You can't stand for some people here, I can help you in private. Just PM me.

EDIT: OOPS, just checked mscim-googlepinyin and mscim-n900-ppinputmethod are in Extras-Devel (http://maemo.org/packages/view/mscim-googlepinyin/ and http://maemo.org/packages/view/mscim...ppinputmethod/). You'd need to turn on Extras categories in order to install them. Tell me if you're prepared.
