Anything that relies on x86 instruction set actually being available will not work the same on ARM. So, no dosbox (except maybe via x86 emulation, but probably not worth it), no wine etc.

skype support is integrated (not standalone app) into the messaging framework as in the N900. I would guess fennec would be available (but, how does it's "slide right to see tabs, slide window left to get configuration button" concept work on the N9's swipe UI) as on N900. gcc is probably apt-get install away, but you may be better off with the SDK and cross-compiling on a PC.
