I'm not yet ready to rip apart my N800, but if it's easy enough to remove, and doesn't cause any problems, I'd like to pull that sucker out so I could take the N800 with me to more places.

I've done it with several devices and my advice is to not do it: removing the camera is relatively easy, but opening and closing the device itself requires some care or you risk ending up with the frontplate too loose.
Removing the camera also makes it easier for moisture to infiltrate the device and damage the screen (the backlight is sensitive to moisture and corrosion).
