The only things missing are multiple rows (there was another launcher I tested that supported this, but was overengineered in some other aspects - don't remember the name) and going full screen with the desktop/home area/"backdrop" (newtonese).
The ideal for layout flexibility would be to allow multiple configurable instances of each applet, but putting everything in one applet isn't such a bad alternative. Perhaps iTablet could be written as a desktop applet that allows flexible icon layouts? The things that would be needed from the desktop would then be:

-- Ability to use the full screen. There is an open feature request for this.
-- Support for Python applets (From another thread, I believe this does not exist.)

The option for using a grid layout for applets would also be nice.
