You can change the name of your accounts. Go to Accounts->Select your Exchange account to rename-> Tap on E-mail->In the first row you can edit your e-mail name

Also, you can do the same thing while you are configuring account

Moreover, while you are configuring account you can change some other things like calendar name

(the same way, but by taping on a "Calendar")
