Yes, you could trick apt-get to do it, but apt-get trickery is not the point here. Not to mention that not all of the users are geeks. Thus HAM.

3) Removing kernel-power with shortcut in menu will brick the device anyway.
You may want to read once again apt-get output, it is not kernel-power that is removed/replaced, but kernel (i.e. the stock one)
