i was sure that i tried this scenario before, but somehow i did it now and it fixed the issue:

flashed the root backupmenu image
restored my backed up rootf image only
boot again to (restored) backupmenu
restored the optfs image - no mount errors now
boot and device restored.

hope it'll help if someone ever gets crossed with such an issue.
