The 256Mb is on the TI OMAP chip itself AFAIK and that can't be touched at all.
What can be changed, but you need professional tools for that, is the internal 2Gb of the N810.
But you're talking about the N800, so I'll stop here stating it can't be changed, again, AFAIK.
