Just bought the Verizon Razr 2 v9m. I was able to tether it to my n810 using the information on this string. Thanks to all who contributed!

Although it works it is not very reliable. It only connects maybe one out of six tries and will disconnect often. Sometime it won't connect at all. If I can't get it to be more consistent, I will probably look into a different phone. The VX8700 sounds like it might be a good option? Its a shame, because I like the form factor of the RAZR2.

Notes

I did need to uncomment out "-chap"
The phone's bluetooth "Incoming Security" setting for the n810 needs to be on automatic for it to work.
I got regular voice service with unlimited Web 2.0 data.

Did not work with the suggested "AT" command.

It worked with GPRS and Data Call, In my limited testing I could not tell which setting was better, thoughts?
