If I understand correctly "apkenv --install" uses the /home/user/.local/share/applications/ folder to put game icons and this is owned by user. If your apkenv requires root access then launching those icons would just result in missing permission (or such) because tapping on an icon means launching it as an user. You could try to backup save files (ie. renaming .apkenv folder to .apkenv_backup) and then without root access , launch and install games, copy saves files inside .apkenv_backup back once you succeed to play/launch games.
