I suspect that drivers from UEFI up will be your issue; especially the digitizer under Linux. Doesn't mean that it's impossible, I think that it may be a bit more difficult than intended due to the Bay Trail/Cherry Trail chipset issues and how badly Intel supported those even in the Windows environments.

Although, I'd have to say that's one helluva of a concept though and a pretty darn good device that can be found for cheap.
