Sounds nice indeed. I usually just dice them and boil them in the soup. Probably as boring as you can imagine Another alternative is cut them to wedges and roast them in the oven with a few drops of oil like potatoes. Or you could pre-boil them to soften them a bit, but not too much so that they survive the next step. Then wrap them in breadcrumbs or batter and shallow fry them. More common with couliflower or squash but any large vegetable would do. Here are some suggestions too.
