Nokia probably just said 8GB since that was the largest available at the time. As for the file system, FAT32 can support volumes well beyond the current 8GB card size (up to 2TB according to Wikipedia), but Windows won't let you format volumes larger than 32GB (although it can read and write to larger volumes). Just use a third-party utility to format the card and the N810 will be able to read it fine.
