I just tried audacity. It runs, and I can open a file and see the wave on the screen, but no sound input/output. A bit of research discovers that it isn't compatible with the sound system the N8x0 uses. For some reason, it can't use esound or alsa! So that one's off the table.

It looks like jokosher is probably a good bet right now, since it uses gstreamer.

Just a note, any audio recording / editing app is going to be very slow on the tablet.
