Ideally, you wouldn't encode the video twice. It'll be slower and the end result will have lower quality.

Mencoder has worked well for me as a quick-and-dirty*, one-step DVD to N800 encoder, but it can be intimidating to someone wanting a simple GUI app.

* I say quick-and-dirty, because if I was worried about the best quality result, I'd spend a lot of time crafting a perfect AviSynth script to process the video.
