Strangely enough, my preferred OS is the stock one that comes on the tablet. It's not perfect by any means, it's got a lot of flaws and so forth, but it works well enough that while I install and use other operating systems and window managers for most of my time using the tablet I just use Maemo (the normal OS)

However, it's really nice to have the option of running other operating systems on the tablet

And yes, you should be able to run a full Mac os 8 on your tablet. The speed might not always be so great but it should run almost all apps written for MacOS8

You might try contacting the developer who ported Basilisk II (the macintosh emulator) to check if there's ones that don't work.
