there is a setting in gconf that says how long between autmated checks, expressed in minutes. setting it to some insane number, like say 999999999 should probably do the trick

/apps/hildon/update-notifier is the key.

ah, silly me, i keep forgetting that for ones, its a nokia added entry that can actually be unchecked...
