To answer your question, yes, the N810 can create its own ad-hoc network (create a new connection and switch mode to ad-hoc in the connection properties dialog).
But ad-hoc eats battery like crazy because there's no powersaving. If you have a jailbroken iPhone, I'd suggest to tether it with the tablet via Bluetooth, if that's possible.
