Are you familiar with any languages?

I think python + hildon bindings (so you can create gui elements) would be a fun start. No compile and link to worry about, and with ssh/vnc you can develop on the device itself from Windows/Linux, so no scratchbox monkey business.

I haven't done this myself mind (beyond some quicky python+qt stuff), but that is where I would start.
