This thread is full of excellent information. I would just like to add one thing (disclaimer -- all my opinion, I'm afraid):

The out of the box experience for the N810 is not that great, which is why I suspect many people gripe about it. Some of the out-of-the-box apps are slow, missing, buggy, or just designed poorly. However, after customising and installing some good applications the tablet is really a joy to use, and a tough act to follow!

For what it's worth, I would recommend the following installs (the links are to the install files to make it easy!):
Tear: web browser -- much faster than micro B (install -- requires a little work)
FBReader: e-book reader (install)
MPlayer: video player (install)
Maemo Mapper: map software (install)
echowb: UI theme with finger-friendly scroll bars (install)
Personal Launcher: home screen applet program launcher (install)
Personal Menu: Program selection menu (install)
