Just tell me why not? Because App Store has more applications than OVI Store? Because OSX of iPhone is more stable than Linux Maemo?

I would say no, Apple will not win.

And I'll tell you why:
1) Linux / Maemo has a big develope community (not like Symbian)
2) Maemo supports Flash with Java, WebKit applications, C++, Java, Python and QT w KDE, etc. It is easier to program Maemo having all these frameworks than iPhone and Symbian (Symbian C++ is hard)
3) The nice thing about iPhone is the TOY interface, it is like a Casino machine with its colorful icons and its list scrolling. But list scrolling without scroll-bar and just one click and drag the list with different speeds for smooth scrolling can be added on Maemo as well.
4) Hope the Ovi Publish will be open for any independent developer (now it is only opened for companies - bad move) with normal fees like App Store has ($99 for life) and not $50 sunscription , then $300 per year and another $200 to sign the application.
5) Nokia emerges with its services like Ovi/Nokia Maps (Apple does not have maps) and Ovi Share and Ovi Contacts, email, messenger.
6) iPhone popularity was built on just a myth, it is not anymore the single touch phone toy on the market, but to fight it, Nokia needs to channel its commercials and all the software improvements to have a device with a GUI at least the same user-friendly and playful as iPhone.
