On the N810, I use Fring. If it also makes its way to the N900, I'd use it there too, personally. Nimbuzz never got ported - and I'm personally not a fan of the web version via Maemo's browser. But lately, I've been using Nimbuzz via the iPhone and I know it would be better on Maemo 5 if done well.
