I have tried XMPP voice calls over EDGE on the N900, but sound is choppy and there is too much latency. This is due to the limitations of EDGE though. I don't know how well it works on 3G networks.

Skype and XMPP voice work really well on wireless though. The sound quality is very high. I've had a few incoming Skype calls that did not connect properly (no sound), but then I just dial back.
