Hi Sam,
Media Streamer is geared towards interfacing with UPnP AV servers and clients. It can act as a client and controller for UPnP devices. There are a lot of UPnP servers and clients around (both hardware and software). Look at the UPnP entry on Wikipedia for some pointers on where to look.
Canola can access podcasts, streaming radio and DAAP audio shares but not UPnP AFAIK. I can listen to all the music (provided it is in a format that the Nokia IT can play) on my Linux desktop using Rhythmbox and enabling the DAAP plugin (and making sure my firewall is not blocking the DAAP port). On Windows, I think older versions of iTunes used to serve DAAP in the standard format that other clients could tap into but more recent versions use a modified version that Canola can't read yet.
