Well, I can help you with one thing, which making the N900 ask you for connection everytime you connect (just like the N97 or symbian)

Go to Settings > Internet Connections >

Then change "Connection automatically" to Always ask.

But for making it disconnect I guess you always have to manually disconnect from the connection.
