With the iPhone, you have to get the information you want, while with Maemo and Android, the information is presented to you in whatever manner you want. A proper desktop is probably one of the most important interface features on a (touch screen) device today. The iPhone has fallen behind on that area and in my opinion, it seriously cripples the user experience because of it.
Look at themes like iNAV where the 'grid' as you call it iks no longer there. That's just one of many. You can also add widgets. My start screen on my iPhone shows me RSS and my latest emails.
