Go to Control Panel and select Phone.
I was not able to restore Dual mode selecting "Settings/Phone". I tested "Save" button in this menu too.

So, I was forced to switch to a special version with 3-choice menu (Dual/3G/GSM).

NOTE: Then I de-installed application my N900 was in 2.5G mode (GSM) and Dual mode was NOT restored during application removal - it stayed in 2G. I didn't try another ways like SIM card removal-insertion...

Additional info: TMo SIM card greyed out the mode in "Settings/Phone" pannel. It just show "Network mode: GSM" (or Dual).
