Although the change to the device class doesn't seem to be permanent, even with the new firmware (for me at least) I'm happy to report that TomTom, having paired once with the N900 keeps on connecting when it is range. So that's my problem solved.

I haven't tried tethering as my Tomtom is the live version with built in comms. I'm just using the hands free for the rare call I get when in the car.
