Well, I have my N900 memory full with all those files and folders I'm using for my job. And I also installed Easy Debian. When I'm travelling to different places where I can find Linux machines, I could easily use your method to connect to my N900 and work on a large screen. Startup time of OpenOffice, for instance, can be a bit slow, but than it works fine enough. So, I could keep applications and files just on N900 and run them on different machines.
