As far as I kmow, font and encoding cannot be changed in Documents To Go for Maemo.

However, you should ask Dataviz, the maker of the software. You can use their new support forum, post a question in the Maemo board.

If you purchased the software, you can login into www.dataviz.com and issue a support request. I did it a few weeks ago for an error while opening a document; they replied promptly and showed real commitment at helping me.
