If you want to uninstall using the terminal, use

apt-get remove
But make sure you put all relevant packages/dependencies there (and that's quite tedious to do, and that's why it's better to recommend uninstalling from App Manager [usual disclaimers follow lol], but anyway...)

In your case:

sudo gainroot
apt-get remove openarena openarena-data
(I'm not sure if sudo gainroot is needed for this -- you need to install "rootsh" if you do need this)
