I've written up specific instructions and posted them on my web site (so I can link from all over, and keep them up to date) Synchronize N800 and Evolution PIM Software. It uses Evolution PIM software on the PC, GPE suite on the N800, and OpenSync with MultiSync 0.9x GUI for syncing, running on the PC. Let me know if there are any additions/changes that are necessary: most of the stuff I did today, but a few things (setting up SSH and becomeroot, etc) I did before and so am documenting from memory.

Furthermore, it should be possible for a creative tinkerer to use different OpenSync plugins instead of Evolution: I know there is a Google Calendar plugin, among others.

[edit: The instructions should also, in theory, work on the 770, though the parts about getting SSH set up might vary a bit, and the software sources should obviously be the appropriate ones for the device you are using]
Well written instructions on the site. I'll adapt them for my own uses (I use Kontact) later.
