You can set n900 to use either just WiFi, Data, any connection that is available or ask you whenever it needs connection. Go to Settings->Internet Connections->Connect automatically and then choose WLAN in your case.
For GPS again in Settings->Location and under Network positioning uncheck the Enable check box this will disable positioning using data/WLAN connection and internal GPS is used which takes quite sometime to get lock and from what I have read in this forum it is advisable to enable the Location desktop widget from the edit mode by going to Add widget coz the maps application gives up looking for GPS fix quite early so you need to turn on the Location widget which from what I have read looks for 5 minutes.and needs to keep turned on again until you get the fix.
