When you install manually, you just don't bother about the OVI maps application. Just open Maps once on your N900, then leave the app. From your computer, get to the link and download the maps for your country (the first ones, under ''The links below point to the map files on Nokia's own server.''). I downloaded the maps for Canada.
Then, unzip everything to /cities.
In which step are you blocked ?
