PDF reading support is built in. Works great!
For writing you can use OpenOffice. Here is a great thread about it, which shows, that there are happy users: http://talk.maemo.org/showthread.php?p=575448
Image editing is partly built in (watch my video about the camera and picture app) and there is a flash based photoshop clone, which works really good on the N900, a little bit slow, though. You can find it here: http://pixlr.com/app/
Edit: there is also Ansel-A in extras devel. maybe I'm making a video about that program, soon.
By the way, if you like what I'm doing.. I'm running for a seat in the maemo community council . You can't vote, because it is required to be a member of this forum for at least 3 month. But maybe other can do
