You can (if you know what you do) move
/usr/share/applications/hildon-status-menu/status-area-profiles.desktop
away, for example move it to your MyDocs folder.
Than the built-in profiles button disappears.

No, ProfilesX does not replace the default icon. If you wish to
get rid off it, do the same like above with
/usr/share/applications/hildon-control-panel/cpprofiles.desktop
