It's very intriguing, in part because the Saturn's lack of analog controls (apart from special games like Nights) make it relatively well suited for games to be played with the N900.
On the other hand, the Saturn is perhaps the most horrifying system to write an emulator for that has ever existed. 6 processors, 8 independent memory chips... not sure what Sega was thinking.
It looks like Yabause at least builds on ARM, but I can only assume the speed is atrocious.
