I myself have added several commands to that page. Most of them I got from IRC chat or trying with dbus --monitor. Since you've found that 'sync mail for exchange' dbus commands helpful, why don't you add it to the page? The wiki is build by users!

BTW, I don't think you can set up a page with 'every' DBUS command. DBUS commands are simply calling application functions, and you can't catch up with all applications built for any platform. Also, some commands wouldn't be useful at all to the common joe user.
