the OS in use IS mounted. ^^ To ensure we're talking about the same: I'm talking about normally booting maemo, use something like mklivecd, which reads the entire OS, copies it and compresses it to an image file, for example .bin. This .bin file contains ALL installed programs, ALL settings and ALL modifications made to the system. It does not contain the files from the 32GB memory, though. This .bin can be used to flash the device. No need to reinstall every program, or made any modifications again. Just like a flashable backup. The next step would be to flash this image from the device itself, that means from a previously cloned, booted OS on the SD-Card (or internal 32GB memory, if you've formatted it previously).
