I think you have a bad handset or simcard issue there - mine does none of these things. In fact, the 'phone quality is amongst the best I have experienced in terms of signal quality & reliability. My N900 will find and hold signal when other device fail and only crashes if I over-indulge in software from the higher repositories.
I don't know where you live, but in the UK I'd buy another carrier's Pay As You Go SIM, lock the radio to GSM and see what happens.Or you could try swapping SIMs with a friend's phone.
If it's not the SIM take it back to the retailer and say you want a replacement handset as the fault is intermittent and renders the handset unsuitable for sale. Check your retail law on the is one; in UK goods have to be 'fit for purpose'.
Looking forward, your N900 should be delivering excellent service. I took a while to understand and appreciate mine and still envy some features on other phones but have come to the conclusion that most 'competitor' devices are loaded with superficial 'bling' to appeal to the masses.
N900 is still the most advanced pocket computer/phone 'converged device' available and will enjoy the support of this community for years to come.
No other device can deliver as much
