I have been using MfE and Exchange 2003 since the day PR 1.1.1 became available. I was originally unable to sync either email or calendar or send any email. Installing mfefolders and disabling the junk folders like "Deleted Items" got email downloads working.

My Exchange admin did something that resolved my email upload problem, which sounds like one of the issues that you have. He said that he would "try something" based on an error that he saw in the server logs. If he remembers what he changed, I will post his answer to this thread.

The calendar sync hang issue is my one outstanding problem with MfE, and it is a huge one for me. It is widely believed to be caused by recurring calendar entries, particularly ones that have no end date. Others have reported success after setting end dates for recurring meetings using Outlook, deleting recurring meetings, or altering birthday entries in the N900 calendar. Another option is exporting the N900 calendar, setting end dates for everything and importing it back.

Unfortunately for me, I really can't just set arbitrary end dates for the recurring meetings that I have been invited to. I hope that this will be resolved by the fix for bug 7971 which closed in week 14, right in the middle of the PR 1.2 "release process".

I would have just stuck with my N800 had I known that MfE was a new product that really wasn't even beta quality yet, but I foolishly expected that it was a port of the mature Symbian product of the same name and that I could have everything in a single device.

I would hate to give up my N900, but it would be absurd to carry two large phones, and it is a huge problem to be unable to see my (busy, constantly-changing) calendar. I am certainly very disappointed that Nokia can't seem to deliver the promised MfE calendar support when even my Nokia dumb phone from many years ago could do that through PC Suite.
