EV doesn't count, look at sensitivity, aperture and exposure.
Tryed outside on sunny day and ended with 2 or 3 dng files per shot. Might be as you said - phone (or app) decide how many to take

What impresses me most is time to write files - I made 5 or 6 shots and it took around 5 minutes for all files to be written, but I was able to shoot without interuption!

A colleague who repairs canon stuff and has more knowledge about hdr than me saw phone, did some shots and was amazed! Had quite hard time to explain him what kind of phone is N900 :P
