I have a N800, but my comments should apply. I have not tried using dd to make a back up. I suppose it is posible, but you would be left with an image file that might be hard to restore.

Before this latest N800 system upgrade, I mounted one of my linux boxes on the n800, and did a selective tar back up (of things like /etc /usr/ sbin/ ...) and avoided things like /proc /media. This took a surprizing long time, and in the end failed before it got to /var Even still, I still have access to those pre-upgrade files (or most of them), which has helped me in restoring my N800 after the upgrade cleared everything.

In summary, a tar back up would give you more flexibility than dd. You can do a back up to a network server, but you will have to get nfs client or cifs (samba) client working first.
